There are two common types: a traditional stainless steel keg, and a key keg, which is what Island Grove uses for our wines. How does a key keg work?

Inside a key keg, the wine sits in a sealed bag that acts as an oxygen barrier. Gas enters the keg outside that bag and gently squeezes it, pushing wine up the line and out the faucet, so the gas never actually touches the wine. That's the key detail: with a stainless steel keg you'd need nitrogen to avoid problems, because CO2 would infuse into the wine and leave it fizzy and off-flavor. The key keg's bag-in-keg design sidesteps that entirely, which means no special gas required and a clean, true-to-style pour from the first glass to the last.


How many glasses of wine are in a keg?

How long does a wine keg last once tapped?

A tapped Island Grove keg holds quality for up to 9 months. Compare that to an open bottle, which oxidizes within a day or two, once you crack a bottle, the clock is running and unsold glasses become poured-down-the-drain losses. The keg's oxygen barrier is what makes that long tapped window possible, so a slower-moving wine is no longer a liability on your list.


Do you need special gas or refrigeration for wine on tap?

No. Island Grove's program needs no special gas and no refrigeration to run. You can pour off a gas line or a simple hand pump, and the system is built to be low-maintenance, fewer moving parts, fewer headaches for your staff.


Is wine on tap actually profitable for a bar or restaurant?

The math is where draft wine earns its place.
